Agua de Sandía (Mexican Watermelon Water)

Ingredients

  • 4 cups (750 grams, 26 ounces) chopped fresh watermelon
  • 6 cups (1.4 liters) cold water divided
  • 3 tablespoons (38 grams) granulated sugar or to taste
  • 1/4 cup (60 milliliters) fresh lime juice
For serving:
  • ice
  • Lime wedges
  • watermelon wedges

Instructions

  1. Place the chopped watermelon in a blender with 2 cups (470 milliliters) of the water and 2 tablespoons (25 grams) of the sugar. Puree until smooth. Do this step in batches if needed.
  2. Strain the watermelon puree through a fine mesh sieve, using the back of a spoon to help push the liquid through if needed. Transfer to a large pitcher.
  3. Add the lime juice and remaining 4 cups (1 liter) water. Stir to combine and add an additional tablespoon of sugar or more to taste.
  4. Serve immediately with ice or chill in the refrigerator. Mix and add ice immediately before serving.
