Ingredients

  • 1 egg room temperature, large, yolk
  • 1 clove garlic grated or minced
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt fine sea salt
  • 3/4 cup extra-virgin olive oil

Instructions

  1. In a medium bowl, whisk together the egg yolk, grated garlic, lemon juice, and salt until well combined.
  2. Slowly drizzle in the olive oil while whisking vigorously, ensuring the mixture emulsifies and thickens to a mayonnaise-like consistency.
  3. Taste and adjust seasoning with additional salt or lemon juice if necessary. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
