Air Fryer Acorn Squash
Air Fryer Acorn Squash is prepared by halving and cleaning small to medium acorn squashes, then cooking them cut side up with olive oil and salt until tender. Brushed with a cinnamon, brown sugar, and butter mixture during cooking, the squash develops a sweet, caramelized glaze with soft flesh inside.
Ingredients
- 2 small or medium acorn squash
- 1 tablespoon olive oil
- ¼ teaspoon kosher salt or to taste
- 1 tablespoon butter melted
- 1 tablespoon brown sugar
- ⅛ teaspoon cinnamon
Instructions
- Preheat the air fryer to 370°F.
- Cut the squash in half and scrape out the seeds with a spoon.
- Coat the squash with olive oil and sprinkle with salt.
- Place in the air fryer basket, cut side up, and cook for 15 minutes.
- While the squash is cooking, combine melted butter, brown sugar, and cinnamon.
- Open the air fryer and brush with the brown sugar mixture. Cook an additional 10-15 minutes or until the flesh is tender and slightly golden.
Notes
- Store leftovers in an airtight container in the fridge for up to 4 days.
- Reheat acorn squash in the air fryer or under a broiler to restore texture.
- Freeze cooled, cooked squash pieces in a zippered bag for up to 4 weeks.
- Defrost frozen squash before using it in soups, stews, or stir-fries.
