Ingredients
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1 pork tenderloin about 1 1/2 lbs
- 6 center cut strips bacon
Rub:
- 1 teaspoon smoked paprika
- 1 teaspoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon canola oil

Instructions
- Season pork with salt and pepper.
- Carefully wrap the tenderloin in the bacon
- Tie the roast at 2- inch intervals with kitchen string each about 12-inches long.
- Mix the rub ingredients. And press onto the tenderloin.
- Carefully cut the tenderloin in half to fit in the air fryer basket.
- Air fry at 400 F for 20 minutes turning halfway, until an instant-read thermometer inserted into the center of the meat reads 145-150 F.
- Let the pork rest about 5 minutes before slicing.
- Slice into 12 slices.
- Serve with mashed potatoes. Garnish with chopped parsley.
