Ingredients
- 2 medium russet potatoes
- 1 tablespoon olive oil
- ½ teaspoon salt plus more to taste
- sour cream for topping
- chives for topping
Instructions
- Scrub the potatoes under running water and dry with a paper towel.
- Use a fork to poke the potatoes all over. Rub with the olive oil and sprinkle with salt.
- Place the potatoes in the air fryer basket and air fry at 400°F for 40-50 minutes, depending on the size, flipping halfway through. Use a knife to poke the potato and check for doneness.
- Use a sharp knife to slice the potatoes lengthwise down the center without cutting all the way down. Gently pinch the sides of the potatoes to open and add toppings of choice.
