Air Fryer Blueberry Shortcakes

Summer shortcakes just got a whole lot easier to make! These Air Fryer Blueberry Shortcakes are the ultimate fresh and fruity summer dessert!

Ingredients

Biscuits
  • 8 count refrigerated jumbo buttermilk biscuits
  • 4 tablespoons unsalted butter melted
  • ½ cup granulated sugar
Blueberries
  • 2 cups frozen blueberries
  • ½ cup water
  • ½ cup granulated sugar
  • ½ cup fresh blueberries
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
Whipped Cream
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Biscuits
    Cup of Yum
  1. Dip each biscuit into the melted butter then into the bowl of sugar, tossing to coat all sides.
  2. Place the biscuits in the air fryer, 4 at a time, and air fry at 360 degrees F for 6 minutes.
  3. Remove from the air fryer and set aside. Fry the remaining biscuits.
Blueberries
  1. Add the frozen blueberries, 1/2 cup of water, sugar, and lemon juice to a small saucepan and stir, bringing blueberries to a boil.
  2. Once blueberries begin to boil, whisk together the cornstarch and 2 TBSP water in a small bowl. Then add to the blueberries and stir constantly until thickened, about 5 minutes.
  3. Remove from heat and stir in the fresh blueberries.
Whipped Cream
  1. In a stand mixer with a whisk attachment, whip the heavy cream, powdered sugar, and vanilla until soft peaks form.
  2. Cut or pull apart biscuits so you have at op and bottom. Place the bottom biscuits on a plate or a bowl and top with blueberries and whipped cream. Then place the biscut top over the filling.

Notes

  • You can substitute pre-made blueberry pie filling for these shortcakes to save on prep time. 
  • Adding fresh blueberries to the blueberry mixture after cooking gives more texture to the filling, but you can leave them out if desired.
