These crispy air fryer breakfast potatoes are made with baby potatoes and bacon and are perfect served with your other breakfast favourites.

Ingredients
- 1 kg baby potatoes
- 6 slices Bacon
- 1 Tbsp extra virgin olive oil
- 1 Tbsp dried parsley
- 1 Tbsp dried oregano
- salt & pepper

Instructions
- Dice the baby potatoes into bite sized chunks. Place the potatoes into a mixing bowl with the oil and seasonings and mix well with your hands.
- Place the potatoes into the air fryer basket and spread them out for an even cook. Air fry breakfast potatoes for 20 minutes at 180c/360f.
- Whilst the breakfast potatoes are air frying dice your bacon into bite sized chunks.
- Shake the air fryer basket and add the bacon bits over the potatoes. Continue air frying breakfast potatoes for a further 12 minutes at the same temperature.
- If the breakfast potatoes and bacon are not crispy enough air fry for another 5 minutes or until crispy to your liking.

Notes
- Quantity. Note that we filled our air fryer half full because we were air frying breakfast potatoes for four of us. If you are making a smaller portion of air fried breakfast potatoes you will need to adjust the cook time.
