Ingredients

  • 2 eggs
  • 2 English muffins
  • 2 sausage patties
  • 2 slices cheese
  • 2 tablespoons butter
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. Split the English muffins and spread butter on each side.
  2. Spray two 4-inch metal pans with cooking spray. Break an egg into each and sprinkle it with salt and pepper.
  3. Add a pan with the egg, split English muffin, and sausage patty to the air fryer basket. Cook at 370 degrees F for 4 minutes.
  4. Pull out the basket and flip the sausage patties over. Flip the egg in the pan unless you like runny yolks. Add the cheese to half of the English muffin.
  5. Air fry for another 2-3 minutes until the egg cooks and the cheese melts.
  6. Add the egg and sausage patty to the English muffin and serve.

Notes

  • Spray those metal egg pans generously! Stuck-on eggs are no fun to clean.
  • Metal pans work better than silicone pans or ramekins. Metal is better at conducting heat, so the eggs cook faster and more evenly.
  • If you like your yolks runny (my husband's preference), skip flipping the egg at the halfway point.
  • If your air fryer basket is large enough, you can cook multiple sandwiches at once.
  • Bagels, croissants, or regular bread all work great as substitutes for the English muffin.
  • Any slice of cheese works great. Just avoid shredded cheese, as it tends to fly around in the air fryer.
