Air Fryer Buffalo Chicken Taquitos Recipe

Ingredients

  • 2 pounds chicken breast shredded
  • 1 tablespoon minced garlic 
  • 1/2 cup buffalo wing sauce
  • 1/2 cup sour cream
  • 13-15 corn tortillas

Instructions

  1. Put the chicken, sauce, garlic, and sour cream in a mixing bowl and mix thoroughly.
  2. Warm the corn tortillas in the microwave between 2 damp paper towels. Corn tortillas can be a bit tricky to roll, so make sure they are warm and flexible before you start.
  3. Add 1/4 cup of the chicken mixture to each corn tortilla shell and roll the taquitos. Keep pinned closed with toothpicks as needed.
  4. Place taquitos in the air fryer basket on one layer. Spritz them with a spray bottle of oil to make them crispier.
  5. Cook on 370 for 9-10 minutes or until crispy and golden.
  6. Let cool a bit before serving.

Notes

  • You can also use chicken thighs for this recipe or a store-bought rotisserie chicken to make the taquitos.
  • Use a small cookie scoop to portion the chicken mixture onto the tortillas. This way, you'll keep your hands cleaner, and every taquito will have the same amount of filling.
  • To avoid soggy taquitos,make sure the chicken mixture isn't too wet.
  • Corn tortillas are more traditional, but flour tortillas work too.
