Air Fryer Caramel Apple Cookies

Ingredients

For the cookies:
  • 1 cup (227g) unsalted butter softened
  • ½ cup (110g) packed light brown sugar
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tablespoon apple juice
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups (300g) all-purpose flour
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
For the frosting:
  • 8 ounces (250g) cream cheese
  • 2 ½ cups (300g) powdered sugar or more or less, as needed
  • ½ tablespoon vanilla extract
For decorating:
  • ¼ cup (50g) caramel
  • ½ green apple chopped

Instructions

  1. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Mix in the eggs, apple juice, and vanilla extract.
  2. Whisk together flour, cinnamon, baking soda, baking powder, and salt in a separate bowl. Gradually add dry ingredients to wet, mixing until well combined.
  3. Preheat the air fryer to 340 degrees F / 170 degrees C and scoop cookie dough onto a parchment-lined air fryer tray.
  4. Air fry the cookies for 8 minutes until lightly golden brown. Remove and transfer to a wire baking rack to cool.
  5. Make the frosting by beating together cream cheese, powdered sugar, and vanilla extract.
  6. Once cookies are cool, spread cream cheese frosting on top, then drizzle caramel over the frosting and sprinkle with chopped green apples.

Notes

  • Ensure the butter is softened to room temperature for easier creaming.
  • Don't overmix! Once the dry ingredients are added, mix until just combined.
  • Be sure to preheat the air fryer for best results.
  • Lining the air fryer basket with parchment paper not only prevents cookies from sticking, it also makes cleanup a breeze.
  • Air fryer temperatures can vary depending on the make and model. I recommend starting with less time, checking food for doneness, and then adding more time as needed.
  • Adjust the amount of powdered sugar in the frosting to achieve your desired sweetness and consistency.
  • Drizzle on the caramel sauce just before serving so they don't become too sticky.
  • Experiment with different types of apples for varying flavor and texture.
  • Storage - keep in an airtight container inside the fridge for up to 3 days.
