Ingredients

  • 1 ½ lbs. carrots about 4 medium-sized
  • 2 Tbsp. oil avocado or olive
  • 1 Tbsp. brown sugar or honey
  • ½ tsp. cumin
  • ¼ tsp. paprika
  • ¼ tsp. garlic powder
  • ¼ tsp. cinnamon
  • 1 tsp. salt to taste
  • ¼ tsp. black pepper

Instructions

    Cup of Yum
  1. Preheat a 6-quart air fryer to 380 degrees.
  2. Peel carrots and cut into 1-inch chunks.
  3. Add the cut carrots to a large bowl along with the oil. Toss until all of the potatoes are evenly coated in the oil.
  4. Whisk the seasonings in a small bowl and then add to the carrots. Mix until the carrots are well coated.
  5. Add the carrots to the air fryer basket and cook for 20-24 minutes, shaking the basket halfway through cooking.
  6. Serve immediately with a sprinkle of fresh parsley, if desired, and enjoy!

Notes

  • To Prep-Ahead: To save time, slice the carrots up to one day ahead of time.
  • To Store: Keep leftover carrots in an airtight container in the fridge for up to 4 to 5 days.
  • To Freeze: Place carrots in a single layer on a baking sheet and flash freeze for a couple of hours. Then, transfer them to a freezer-safe bag and freeze for up to 9 to 10 months.
  • To Reheat: To get the carrots crispy, pop them back in a 325℉ air fryer for 5 to 7 minutes. You can use the microwave, but they will get soggy.
