Air Fryer Chicken Kabobs Recipe
Air Fryer Chicken Kabobs combine tender chunks of marinated chicken thighs or breasts with a balanced mix of tamari soy sauce, coconut milk, lime juice, maple syrup, and Thai red curry paste. Marinating the chicken for at least two hours infuses it with mild, layered flavors. Cooking on skewers in the air fryer at 350°F results in juicy chicken pieces with a flavorful caramelized exterior, cooked safely to 165°F internal temperature.

- Add the chicken and let marinate for at least 2 hours (up to overnight).
- Soak bamboo skewers for 30 minutes.
- Thread marinated chicken onto skewers.

- Oil the grill grates, then preheat the grill (or griddle pan) to medium-high (direct heat).
- Grill chicken for 10-15 minutes, turning them a couple of times and brushing on more marinade until golden and cooked through. Use a meat thermometer to ensure the internal temperature of the chicken reaches 165F/74C.
- You can reduce the remaining marinade in a saucepan over low heat until it thickens, and brush it over the cooked chicken for extra flavor.
Notes

- Cut chicken into evenly sized pieces to ensure even cooking on the skewers.
- Use mild Thai red curry paste for less heat suitable for families or guests sensitive to spice.
- Soak bamboo skewers for 30 minutes before cooking to prevent burning.
- Brush chicken with remaining marinade when grilling to enhance moisture and flavor.
- Using lite or half-fat coconut milk can reduce calories without significantly altering flavor.
