Air Fryer Chickpea Tacos
Air Fryer Chickpea Tacos feature spiced chickpeas cooked crisp in an air fryer, served on small corn tortillas with radish, avocado, cabbage, cranberries, and coconut yogurt. The chickpeas offer a crunchy texture with smoky paprika and cumin, balanced by fresh and creamy taco toppings. The assembly delivers a flavorful vegetarian taco with contrasts in texture and freshness.
Ingredients
- 14 oz 400g tin rinsed and drained and dried
- 2 tsp olive oil
- ½ tsp smoked paprika
- ½ cumin ground
- salt
- 8 corn tortillas small
- Taco toppings
- radish thinly sliced
- avocado
- cabbage shredded
- cranberries
- coconut yoghurt
- lime
Instructions
- Pre heat air fryer to 390F / 200C.
- Mix all the ingredients together in a bowl.
- Add the chickpeas in to the air fryer basket.
- Cook for 12-15 mins turning half way through.
- Assemble tacos and top with coconut yoghurt and limes for squeezing.
Notes
- Completely dry the drained chickpeas before seasoning to ensure they crisp up in the air fryer.
- You can add 1-2 extra minutes of cooking for more crispness, but watch closely to avoid burning.
- Feel free to vary the spices on the chickpeas according to your taste preferences.
- Add sriracha or chipotle sauce for extra heat and flavor.
- Prepared chickpeas can be chilled and stored for a couple of hours to prep ahead before cooking.
