- 4 ounces pork sausage
- 1/2 red bell pepper diced
- 1/2 onion diced
- 2 cups spinach
- 1/4 teaspoon salt
- 5 eggs
- 1/2 cup shredded cheese
Instructions
Make the filling
- Put the breakfast sausage in a frying pan over medium heat. Cook it, occasionally stirring, until it is no longer pink.
- While it cooks, dice the bell pepper and onion. Add the bell pepper, onion, spinach, and salt to the sausage mixture and cook for 2-3 minutes.
- Let the mixture cool completely and refrigerate in an airtight container for 4-5 days until ready to make the egg cups.

Make the egg cups
- Put 1/3 cup of the sausage mixture in a medium bowl for a single serving. Add 1 egg and 2 tablespoons of cheese and stir to mix well. To make all the muffins at once, combine all the filling with 5 eggs and 1/2 cup of cheese in a medium bowl.
- If you make all the egg muffins at once, you will need 10 muffin cups. For a single serving, use 2 muffin cups. Spray the muffin cups with nonstick cooking spray. Divide the egg mixture evenly between the cups. Put them in the air fryer basket and cook at 350 degrees F for 10-12 minutes until they are golden brown and cooked through.
Notes
- Make sure to whisk your eggs thoroughly when combining them with the filling. This will give you a fluffier egg cup.
- Use nonstick spray in the muffin cups so the eggs don't stick.
- If the egg muffins get too brown on top, reduce the cooking temperature by 10 degrees F.
