Air Fryer Everything Bagel Chicken Roll-Ups
These chicken roll-ups combine thin-sliced chicken breasts filled with a creamy blend of cream cheese, cheddar, and scallions, along with baby spinach. Coated in a mix of everything bagel seasoning and sesame seeds and air fried to a crisp golden exterior, they offer a balanced texture of tender chicken and crunchy coating. Ingredients
- 1/4 cup everything bagel seasoning
- 1/2 cup sesame seeds
- 2 egg large, whites
- 1/2 cup cream cheese 3 ounces, whipped
- 1/2 cup cheddar cheese 2 ounces, reduced-fat, shredded
- 1/4 cup scallions chopped
- 8 chicken breast thin-sliced (4 ounces each, cutlets
- 1/2 cup baby spinach chopped
- olive oil spray form
Instructions
- In a shallow bowl, combine the bagel seasoning and sesame seeds. Place the egg whites in another bowl.
- Preheat an air fryer to 375 degrees F.
- In a small bowl, combine the cream cheese, cheddar, and scallions.
- Place the chicken cutlets on a cutting board. Spread 1 1/2 tablespoons of the cheese mixture on each cutlet, then put 1 tablespoon spinach leaves in the center of each. Roll up the chicken and place seam side down.
- Dredge each roll-up in the egg whites, then in the seasoning mixture, shaking off any excess as you go.
- Transfer in batches to the air fryer basket and spray the tops with oil. Cook for 15 minutes, turning halfway, until golden and crisp on the outside and cooked through in the center.
- Transfer the roll-ups to a plate and serve.
Notes
- If you don't have an air fryer, bake the chicken roll-ups at 425°F for 25 minutes.
- Make your own everything bagel seasoning by mixing dried minced onion, garlic, poppy seeds, sesame seeds, and coarse salt.
- Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days.
