Air Fryer Falafel

Ingredients

  • 15 oz chickpeas, drained and dried
  • 2 cups parsley
  • 1 cup cilantro
  • 1/4 cup onion, chopped
  • 1/2 tbsp garlic, minced
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 small jalapeño, seeded and diced (optional)
  • 1 tsp baking soda (baking powder works too)
  • 1/4 cup flour

Instructions

  1. In a food processor combine the chickpeas, parsley, cilantro, onion, garlic, cumin, salt, pepper, jalapeño, and baking soda. Pulse until smooth about 1 minute.
  2. Add the mixture to a medium-size bowl and stir in the flour. Scoop out about 2 tablespoons and shape it into a small ball.
  3. Place them in the basket of the air fryer. Cook at 350° Fahrenheit for 7 minutes. Flip them halfway through the cooking time and cook for an additional 5-7 minutes.
