Ingredients

  • 300 g (2 1/3 cups) bread flour
  • 7 g (1 sachet) instant yeast ( 2 ⅓ tsp approximately)
  • ½ tbsp sugar or honey
  • 1 tsp salt
  • 250 ml (1 cup) tepid water
  • 6 tbsp olive oil or as needed
  • 1 tsp flaked sea salt
  • 1 tbsp softened butter for greasing the pan

Instructions

    Cup of Yum
  1. Add the flour, yeast, sugar and salt into a mixing bowl and stir well to combine.
  2. Pour the water and 2-3 tablespoons olive oil into the bowl and use a dough whisk or a wooden spoon to stir the ingredients until you have a sticky, shaggy dough. You can stop mixing as soon as the flour is well hydrated and you see no dry streaks.
  3. Cover the bowl with a shower cap (very useful in bread baking!) or a towel and leave to rise for an hour or until it has doubled in size. In the summer this can take as little as 45 minutes but it can take much longer if your kitchen is cold.
  4. Grease an 8 inch (or 7 inch depending on the size of your air fryer) square or round pan with softened butter. If you are unsure as to whether the pan is non-stick then you should also line it with baking paper.
  5. Deflate the dough and transfer to the prepared pan, gently stretching with oiled hands so that it covers the base of the pan. Cover and leave to rise for 45-60 minutes, or until the dough is puffy and bubbly.
  6. Drizzle the top of the dough with olive oil then use your fingertips to create deep dimples in the dough (so satisfying!). Sprinkle with flaked sea salt.
  7. Preheat your air fryer to 190°C (375°F). Place the focaccia into the air fryer basket and bake for 22 minutes, or until the top is deeply golden and crisp.
  8. Carefully lift the pan out of the air fryer and invert the focaccia so that you can crisp up the underside of the bread. Air fry for a further four minutes or until baked to your liking.
  9. Transfer the focacci to a wire rack to cool before slicing. It is absolutely delicious served with soup or pasta dishes or as an appetizer with dips. I love to also make focaccia sandwiches and will happily eat a toasted slice with smashed avocado for breakfast!

Notes

  • The first thing to do before starting this recipe is to check your pan fits into the air fryer basket. You can use a foil pan (the disposable kind) or a brownie pan / cake pan.
  • Store focaccia in a bread bag at room temperature for 3-4 days or slice and freeze it for up to three months.
  • Air Fryer can be a bit temperamental and their temperature varies between models. You can check on your focaccia 10 minutes before the end of baking time by gently opening the air fryer drawer. If it is browning too much then drop the temperature by 5 degrees.
  • You can create endless variations of focaccia bread by adding herbs, flavored salt, garlic butter and so on.
  • If you would rather bake this focaccia in the oven then preheat to 200°C (400°F) and bake for 25-28 minutes.
