Air Fryer Greek Chicken Traybake. How to cook a delicious Greek style chicken traybake in the air fryer oven. Loaded with chicken thighs, chicken drumsticks, mixed peppers, red onion, lemon wedges, fresh garlic, courgette and flavoured green olives.

Ingredients

Kitchen Gadgets:
  • Air Fryer
  • 8 inch Baking Pans
Greek Chicken Traybake Ingredients:
  • 2 chicken legs
  • 3 mixed peppers
  • 2 medium red onions
  • 1 medium courgette zucchini
  • 2 medium lemons
  • 8 garlic cloves
  • 1 Packet Green Olives
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp oregano
  • 1 Tsp basil
  • 1 Tsp thyme
  • salt & pepper
  • 4 Tsp extra virgin olive oil for the chicken skin

Instructions

  1. Peel and quarter your red onion. Then pull it apart so that each quarter resembles about 4 chunks of red onion.
  2. Deseed and slice your mixed peppers into quarters.
  3. Slice your courgette into 4 courgette quarters and then slice each quarter in half. So that you have big chunks of courgette that won’t over cook.
  4. Quarter the lemons.
  5. Peel your garlic cloves.
  6. Half your chicken legs so that you have 2 chicken thighs and 2 chicken drumsticks.
  7. Spread the ingredients you have prepped between two 8-inch baking trays that will fit in your air fryer oven.
  8. Load each tray with flavoured green olives.
  9. Split the seasoning and extra virgin olive oil between the two trays and add on top. Mix each tray well with your hands.
  10. Place the chicken pieces on top and rub extra virgin olive oil into the skin. Season the skin with salt and pepper.
  11. Place the trays in the air fryer oven and cook for 30 minutes at 160c/320f. Then swap the shelves around so that they have rotated top to middle shelves. Cook for a further 50 minutes at 180c/360f.

Notes

  • You can use any mixed peppers. We used one yellow, one red and one green.
  • Check on the chicken at about 20 minutes before it is done. If one chicken traybake is coming along faster than the other swap the shelves around for the final cooking time.
  • You can cut your lemons into either lemon wedges or lemon slices.
