Ingredients

  • 2 tablespoons vegetable oil for frying
  • 2 plantain sweet plantains, yellow plantains, ripe
  • ¼ pound prosciutto very thinly-sliced [110 g, or serrano ham
  • ¼ pound cheddar cheese very thinly-sliced [110 g
  • 1 tablespoon parsley or cilantro, for decoration (optional, minced

Instructions

1. Preparing

  1. Peel the plantains (see how to peel plantains). Pre-heat the air fryer or oven to 450ºF [230ºC]. Grease two mini-muffin baking trays with the vegetable oil.

2. Making rolls

  1. With a sharp knife, cut the plantains into thin long strips. Cut the ham and cheese into strips roughly the same size as the plantain slices.Place a plantain slice on top of a slice of ham, then top with a slice of cheese. Roll as tightly as possible. Place in the cupcake mold, or hold with a toothpick if you're cooking them in the air fryer.

3. Baking

  1. Cook in the air fryer or oven for 20 minutes or until the rolls turn golden brown. Sprinkle with the parsley. Serve hot.

Notes

  • Since they are supposed to be served hot, you can place them unbaked in the fridge, then bake when it's time to serve them.
