Air Fryer Potato Skins
Air Fryer Potato Skins are crispy twice-cooked potato halves hollowed out and filled with sharp cheddar and pepper jack cheeses, savory bacon, and creamy sour cream. This dish delivers a rich savory flavor with contrasting textures of crispy skin and melted cheeses. Using an air fryer results in a crispier texture with less oil compared to deep frying.
Ingredients
- 1 potatoes cool, batch baked
- 1 cup cheddar cheese shredded, divided
- 1 cup pepper jack cheese shreddeed
- 12 lices Bacon and chopped, cooked
- 1/2 cup sour cream
Instructions
- Preheat the air fryer to 385 degrees F.
- Cut the potatoes in half lengthwise. Use a small spoon to carefully remove the flesh from the inside, leaving a 1⁄4-inch “rim”.
- Brush the potatoes with cooking oil. Season with salt and pepper.
- Place the potatoes into the air fryer basket, skin side up.
- Cook for 10 minutes, flipping halfway.
- Sprinkle half of the cheeses evenly inside each of the potato skins. Cook for 5 more minutes, or until the cheese is melted.
- Fill with sour cream, bacon, more cheese, and serve warm.
