Description
This recipe uses pre-baked potatoes sliced in half and scooped to leave a quarter-inch-thick rim. The skins are brushed with oil and seasoned before being cooked in an air fryer at 385°F, skin side up, to crisp them. After initial cooking, cheeses are added inside the skins and they are cooked further until melted.
The final step is to top filled skins with sour cream and cooked bacon pieces, adding creamy and smoky elements that complement the melted cheese. This method results in crisp skin with a gooey, cheesy inside and smoky bacon pieces providing crunch and flavor.
These potato skins can be served warm as an appetizer, snack, or side dish. Cooking in an air fryer reduces oil usage and shortens cooking times compared to traditional oven baking.
Ingredients
- 1 potatoes cool, batch baked
- 1 cup cheddar cheese shredded, divided
- 1 cup pepper jack cheese shreddeed
- 12 lices Bacon and chopped, cooked
- 1/2 cup sour cream
Instructions
- Preheat the air fryer to 385 degrees F.
- Cut the potatoes in half lengthwise. Use a small spoon to carefully remove the flesh from the inside, leaving a 1⁄4-inch “rim”.
- Brush the potatoes with cooking oil. Season with salt and pepper.
- Place the potatoes into the air fryer basket, skin side up.
- Cook for 10 minutes, flipping halfway.
- Sprinkle half of the cheeses evenly inside each of the potato skins. Cook for 5 more minutes, or until the cheese is melted.
- Fill with sour cream, bacon, more cheese, and serve warm.
