Ingredients

  • 1 large sweet potato
  • ½ small squash
  • 1 shallot
  • 1 cup carrots
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Peel the squash, sweet potato and carrots.
  2. Chop them into small pieces. Winter squash and sweet potatoes will take the longest to cook, so cut the pieces smaller.
  3. Peel the shallot and chop into large pieces.
