Air Fryer Salmon in Coconut Milk with Lentils (Dairy-free)

Ingredients

  • 300 g green lentils
  • 6 salmon cut into large cubes, fillets
  • 350 ml coconut milk light
  • 3 tablespoon soy sauce or tamari sauce
  • 3 tablespoon lemon juice
  • 1 lice ginger fresh
  • 3 avocado
  • 1 cucumber
  • 4 tablespoon fresh herbs finely chopped, choice of coriander, chives, chervil
  • 1 tablespoon sesame seeds optional, toasted
  • salt to taste, sea salt
  • black pepper to taste, sea salt

Instructions

  1. Place the green lentils in a pot of boiling water and cook for 15 minutes, then drain, season to taste and set aside.
  2. In the meantime, place the salmon, coconut milk, soy sauce, lemon juice and ginger into the container of the ActiFry. Close the lid, and set the ActiFry to mode: 8 - world food, for 7 minutes.
  3. Whilst the salmon cooks, cut the flesh of the avocados into cubes, and cut the cucumber into cubes.
  4. Divide the lentils, avocado and cucumber equally among 6 bowls or shallow plates. Add the salmon, sprinkle with fresh herbs and optional sesame seeds. Season to taste and serve.

Notes

  • The recipe serves six and can be adjusted by altering salmon and lentil amounts accordingly.
  • Use a light coconut milk to keep the sauce delicate and avoid overpowering the salmon flavor.
  • Cook lentils separately to prevent over-softening during salmon cooking.
  • Fresh herbs and toasted sesame seeds add fresh and crunchy accents; omit if unavailable.
  • If you lack an ActiFry or similar air fryer appliance, gently poach salmon in a covered pan with coconut milk mixture on the stove as a substitute.
