Air Fryer Salmon in Coconut Milk with Lentils (Dairy-free)
Description
Air Fryer Salmon in Coconut Milk with Lentils combines salmon fillets cut into large pieces with a fragrant mixture of light coconut milk, soy or tamari sauce, lemon juice, and fresh ginger. This blend is cooked using an air fryer setting that simulates gentle, moist heat, allowing the salmon to poach in the flavorful liquid without direct frying. Green lentils are boiled until tender and seasoned before serving.
The meal is assembled by portioning lentils into bowls along with cubes of ripe avocado and cucumber, giving a contrast of textures and fresh flavors. The salmon is placed on top and garnished with finely chopped herbs such as coriander or chives, and optionally toasted sesame seeds for subtle nuttiness.
This dish works well as a balanced main, combining protein, healthy fats, and legumes. The light coconut milk sauce keeps the salmon moist and delivers gentle aromatic undertones. It suits dairy-free meals and those seeking a mix of cooked and fresh ingredients in one plate.
The recipe notes credit its source as the Tefal ActiFry app, and the cooking times and portions are set to accommodate six servings.
Ingredients
- 300 g green lentils
- 6 salmon cut into large cubes, fillets
- 350 ml coconut milk light
- 3 tablespoon soy sauce or tamari sauce
- 3 tablespoon lemon juice
- 1 lice ginger fresh
- 3 avocado
- 1 cucumber
- 4 tablespoon fresh herbs finely chopped, choice of coriander, chives, chervil
- 1 tablespoon sesame seeds optional, toasted
- salt to taste, sea salt
- black pepper to taste, sea salt
Instructions
- Place the green lentils in a pot of boiling water and cook for 15 minutes, then drain, season to taste and set aside.
- In the meantime, place the salmon, coconut milk, soy sauce, lemon juice and ginger into the container of the ActiFry. Close the lid, and set the ActiFry to mode: 8 - world food, for 7 minutes.
- Whilst the salmon cooks, cut the flesh of the avocados into cubes, and cut the cucumber into cubes.
- Divide the lentils, avocado and cucumber equally among 6 bowls or shallow plates. Add the salmon, sprinkle with fresh herbs and optional sesame seeds. Season to taste and serve.
Notes
- The recipe serves six and can be adjusted by altering salmon and lentil amounts accordingly.
- Use a light coconut milk to keep the sauce delicate and avoid overpowering the salmon flavor.
- Cook lentils separately to prevent over-softening during salmon cooking.
- Fresh herbs and toasted sesame seeds add fresh and crunchy accents; omit if unavailable.
- If you lack an ActiFry or similar air fryer appliance, gently poach salmon in a covered pan with coconut milk mixture on the stove as a substitute.
