Ingredients

  • 6 eggs hard-boiled or soft-boiled
  • 1 pound ground pork sausage
  • 1 egg
  • ¼ cup flour
  • 1 cup Panko bread crumbs
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. You can boil your eggs any way you like, using the air fryer, slow cooker, Instant Pot, or on the stovetop.
  2. Here are directions for soft boiled eggs on the stovetop. Put the eggs in a saucepan, covered with water, and bring the eggs to a rolling boil. Once the water is boiling, cover the pot with a lid and remove it from the heat. Set a timer for 6 minutes.
  3. No matter how you cook your eggs once they are done plunge them into a bowl of ice water for 5-10 minutes. Then dry them off and proceed with making Scotch eggs.
  4. Place the flour into one shallow bowl and mix with the garlic powder.
  5. Add the panko breadcrumbs to a separate shallow bowl and season with chili powder, salt, and pepper to taste.
  6. Beat the remaining egg and put it into a bowl by itself.
  7. Peel each of the boiled eggs.
  8. Divide the sausage into six even pieces.
  9. Flatten each sausage between two pieces of parchment paper, then wrap the sausage around the eggs completely.
  10. Roll the sausage-covered eggs in the flour, dip in the egg, and then coat the breadcrumbs.
  11. Place on a well-greased pan that will fit in your air fryer.
  12. Preheat the air fryer to 375 degrees F for 3 minutes.
  13. Air fry the scotch eggs at 375 degrees F for 15 minutes, turning halfway through the cooking process.

Notes

  • Use freshly ground sausage for the best flavor and texture.
  • Experiment with different boiling times to ensure the eggs are cooked to your liking. For a softer yolk, boil the eggs for 5-6 minutes; for a firmer yolk, boil them for 7-8 minutes.
  • Wet your hands with water or oil to prevent the sausage from sticking to your fingers.
  • For a crispier exterior, spray the breaded scotch eggs with cooking oil before air frying.
