Air Fryer Sweet Potato Cubes

These air fryer sweet potato cubes are ready in under 20 minutes! They're an easy side dish that's sweet, smoky, garlicky, and irresistible.

Ingredients

  • 1 pound sweet potato about 2 small/medium
  • 1 ½ tablespoons extra-virgin olive oil
  • ¾ teaspoon kosher salt plus additional to taste
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground black pepper

Instructions

  1. Scrub the sweet potatoes and cut into 1/2-inch cubes (peeling is optional; we leave our peels on).
  2. Place in a large bowl and toss with the oil, salt, smoked paprika, garlic powder, and black pepper.
  3. Place in the air fryer basket and air fry at 400°F for about 12 minutes, shaking the basket halfway through. The potatoes should be dark in spots on the outside and tender inside; check a few minutes early just to be safe as all air fryers are different. Serve warm, with a sprinkle of salt to taste.

Notes

  • TO STORE: Refrigerate leftover air fryer sweet potato cubes in an airtight container for up to 4 days.
  • TO REHEAT: I recommend reheating these air fryer sweet potato cubes in the air fryer at 350ºF, but the microwave also works or you can eat them cold in salads and wraps.
  • TO FREEZE: Store in an airtight container or freezer bag for up to 3 months. Thaw in the refrigerator before reheating.
