Ingredients

  • 2 (260g) sweet potatoes peeled and cut into 1-inch cubes
  • ¼ cup (37.5g) pecans chopped; or more to taste
  • ¼ cup (59ml) maple syrup

Instructions

  1. Peel the sweet potatoes and cut them into even, bite-sized cubes.
  2. If using pecan halves, chop them with a knife.
  3. Add sweet potato cubes, chopped pecans, and maple syrup to a large bowl. Toss to combine until the pecans are incorporated and the sweet potatoes are well coated with the maple syrup.
  4. Place in the air fryer basket in a single layer.
  5. Cook at 375 degrees F / 190 degrees C for about 18 minutes, or until the potatoes are fork-tender.

Notes

  • Make sure the sweet potato cubes are well-coated before cooking. 
  • Don’t overcrowd the air fryer. Cook in batches if necessary.
  • Toss the sweet potatoes halfway through cooking time. 
  • Serve right away to enjoy the crispy exterior.
