Air Fryer Turkey Meatloaf
This Air Fryer Turkey Meatloaf features ground turkey mixed with grated zucchini, oats, onion, egg, and ketchup for moisture and flavor. Shaped into mini loaves, it cooks quickly in the air fryer with a ketchup glaze applied halfway through for a balanced savory finish. The meatloaf yields a moist texture with a slightly caramelized top and can be garnished with parsley for freshness.
Ingredients
- 1 pound ground turkey 93% lean
- 1/4 cup ketchup (plus 2 tablespoons for topping*)
- 1/3 cup rolled oats quick
- 1/3 cup onion minced
- 1/3 cup zucchini squeezed well, grated
- 1 large egg beaten
- 1 teaspoon kosher salt
- 1/8 teaspoon black pepper
- Optional (minced parsley for garnish)
Instructions
- In a medium bowl combine ground turkey, oats, zucchini, onion, 1/4 cup ketchup, egg, salt and black pepper, mix well with a fork.
- Divide mixture into 4 equal portions and shape into 4 mini loaves.
- Transfer to the air fryer basket and air fry 350F 15 minutes, flip and brush on the remaining ketchup and cook and additional 5 minutes, until the center is cooked through. garnish with parsley, if desired.
Notes
- Use sugar-free ketchup to lower added sugars in the recipe.
- If you don't have an air fryer, bake the meatloaf on a sheet pan at 425°F for about 30 minutes until cooked through.
