Description
The meatloaf preparation blends lean ground turkey with quick oats for binding, finely minced onion, and grated zucchini squeezed to remove excess moisture to keep the loaf moist without adding fat. Beaten egg and ketchup are incorporated for additional flavor and cohesion. The mix is divided into four equal mini loaves that fit well in an air fryer basket.
Cooking at 350°F for 15 minutes, then flipping and brushing with extra ketchup before an additional 5 minutes, ensures even cooking and a flavorful glaze. Ingredients
- 1 pound ground turkey 93% lean
- 1/4 cup ketchup (plus 2 tablespoons for topping*)
- 1/3 cup rolled oats quick
- 1/3 cup onion minced
- 1/3 cup zucchini squeezed well, grated
- 1 large egg beaten
- 1 teaspoon kosher salt
- 1/8 teaspoon black pepper
- Optional (minced parsley for garnish)
Instructions
- In a medium bowl combine ground turkey, oats, zucchini, onion, 1/4 cup ketchup, egg, salt and black pepper, mix well with a fork.
- Divide mixture into 4 equal portions and shape into 4 mini loaves.
- Transfer to the air fryer basket and air fry 350F 15 minutes, flip and brush on the remaining ketchup and cook and additional 5 minutes, until the center is cooked through. garnish with parsley, if desired.
Notes
- Use sugar-free ketchup to lower added sugars in the recipe.
- If you don't have an air fryer, bake the meatloaf on a sheet pan at 425°F for about 30 minutes until cooked through.
