​Air Fryer Vegetables

This air fryer vegetable recipe is full of brussel sprouts, bell peppers, squash & onions - an easy veggie side dish to pair with any protein!

Ingredients

  • 1 red pepper chopped
  • 1 red onion chopped
  • 2 cups Brussel sprouts halved lengthwise
  • 1 large yellow squash sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Place all the vegetables, olive oil and seasoning together in a large bowl and toss well to combine.
  2. Preheat the air fryer to 375°F. Arrange a single layer of the vegetables in the air fryer basket. Air fry for 10-15 minutes, shaking the air fryer basket once or twice during cooking to ensure even cooking.
  3. Serve immediately with protein of choice.

Notes

  • Storage: Simply add to a container and store in the fridge. Eat within 3-4 days.
