Ingredients
- 1 red pepper chopped
- 1 red onion chopped
- 2 cups Brussel sprouts halved lengthwise
- 1 large yellow squash sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Place all the vegetables, olive oil and seasoning together in a large bowl and toss well to combine.
- Preheat the air fryer to 375°F. Arrange a single layer of the vegetables in the air fryer basket. Air fry for 10-15 minutes, shaking the air fryer basket once or twice during cooking to ensure even cooking.
- Serve immediately with protein of choice.
