Ingredients
- 3 cups mixed vegetables, cut into 1-inch pieces (cauliflower, broccoli, squash, carrots, beets, etc)
- 1 tablespoon olive oil or olive oil spray
- 1/2 teaspoon kosher salt
Additional optional seasonings:
- Cajun Seasoning
- Italian herbs seasoning
- herb de Provence
Instructions
- Place the vegetables in a bowl and toss to coat with the oil and salt.
- Place the vegetables in the air fryer basket and cook on 400F degrees for 15-20 minutes or until golden and fork tender.
