Air Fryer Zucchini

Air Fryer Zucchini features tender zucchini slices tossed with olive oil, lemon juice, salt, and pepper, then cooked until softly golden in an air fryer. The resulting zucchini pieces are moist and lightly caramelized but not crispy unless sliced thinner and cooked in batches. This method offers a healthy, flavorful way to enjoy summer squash quickly with a bright lemon finish enhancing the mild squash flavor.

Notes

  • Choose medium zucchinis with smooth, dark green skin for optimal texture.
  • For crispier zucchini, slice thinner (⅛ inch) and cook in batches in a single layer.
  • Overcooking can make the zucchini mushy; check for fork tenderness towards the end of cooking time.
  • Store leftovers in an airtight container in the fridge for up to three days; reheat in the air fryer at 400°F for 4-5 minutes.
  • To freeze, cool zucchini completely and freeze in a single layer before packing to prevent clumping.
