Air Fryer Zucchini
Air Fryer Zucchini features tender zucchini slices tossed with olive oil, lemon juice, salt, and pepper, then cooked until softly golden in an air fryer. The resulting zucchini pieces are moist and lightly caramelized but not crispy unless sliced thinner and cooked in batches. Ingredients
- 4 zucchini 1.5 pounds, medium
- 1 tablespoon olive oil extra virgin
- 1 lemon juice of
- 1 teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
- Preheat the air fryer to 400°
- Trim blossom and stem ends from zucchini and discard
- Slice each zucchini in half lengthwise, then cut each half into ¼ inch slices
- In a large bowl, toss the zucchini slices with olive oil, salt, pepper and lemon juice
- Put the seasoned zucchini in the air fryer basket.
- Cook 15 minutes, shaking the basket halfway through.
- Serve right away

- Choose medium zucchinis with smooth, dark green skin for optimal texture.
- For crispier zucchini, slice thinner (⅛ inch) and cook in batches in a single layer.
- Overcooking can make the zucchini mushy; check for fork tenderness towards the end of cooking time.
