Air Fryer Zucchini
Description
This Air Fryer Zucchini recipe begins by trimming and slicing medium zucchinis into quarter-inch thick pieces. The slices are seasoned with extra virgin olive oil, fresh lemon juice, kosher salt, and black pepper to add brightness and seasoning that complements the natural mild flavor of the zucchini.
The slices cook at 400°F for 15 minutes in an air fryer basket with a shake halfway through to ensure even cooking. The result is tender zucchini with slight golden edges but not crispy. For a crispier snack, thinner slices (about ⅛ inch) cooked in single layers and batches are recommended, which produce a texture closer to fries.
This zucchini can be served immediately as a side or healthy snack. When reheated, it can be refreshed in the air fryer to regain warmth without sogginess. Leftovers keep well refrigerated for up to three days. The recipe notes suggest selecting medium zucchini with smooth, dark green skin for best texture.
Freezing is possible by first freezing zucchini pieces in a single layer to avoid clumping, then transferring to storage containers. Overcooking leads to mushiness, so checking for doneness a few minutes before time is advised.
