Air Fryer Zucchini Fritters Recipe

Air Fryer Zucchini Fritters are crispy, golden patties made from shredded zucchini mixed with egg, flour, baking powder, and seasonings such as Italian herbs, red pepper flakes, and garlic powder. Removing excess moisture from the zucchini before shaping and air frying yields a crisp exterior and tender interior. Ingredients

  • 2 zucchini
  • 1 egg
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper ground

  1. Shred the zucchini and squeeze out excess water using cheesecloth. Removing as much liquid from the zucchini as possible is key to getting crispy air fryer fritters.
  2. Place the shredded zucchini in a bowl and add egg, flour, baking powder, salt, Italian seasoning, red pepper flakes, garlic powder, and black pepper. Mix everything.
  3. Preheat the air fryer for 5 minutes at 350 degrees F.
  4. While it preheats, make 9-10 patties out of the zucchini mixture. It is easiest to roll the fritter batter into a ball, then flatten the ball on a cutting board.
  5. Place the patties in the air fryer basket and brush or spray some oil on top. Use parchment paper or foil in the basket to make cleanup easier.
  6. Air fry the patties for 10 minutes. Flip and then cook for another 5 minutes or until lightly brown.
  7. Serve with sour cream and green onions or with a dipping sauce.

Notes

  • Leaving the zucchini skin adds nutrients, texture, and color but peeling is also acceptable.
  • If cheesecloth is unavailable, use a clean kitchen towel or press shredded zucchini in a colander to remove moisture.
  • Adjust seasoning blend to your taste; Italian seasoning and red pepper flakes can be varied or omitted.
  • Substitute almond flour for all-purpose flour to make the fritters gluten-free.
