Air Fryer Zucchini Fritters Recipe

Air Fryer Zucchini Fritters are crispy, golden patties made from shredded zucchini mixed with egg, flour, baking powder, and seasonings such as Italian herbs, red pepper flakes, and garlic powder. Removing excess moisture from the zucchini before shaping and air frying yields a crisp exterior and tender interior. These fritters come out lightly browned after about 15 minutes, making a flavorful appetizer or side dish served with sour cream or dipping sauces.

Description

This recipe begins by shredding zucchini and squeezing out as much liquid as possible, which is critical to achieving a crunchy texture. The zucchini is combined with egg, all-purpose flour, baking powder, and a blend of seasonings—Italian seasoning, red pepper flakes, garlic powder, salt, and black pepper—to form a batter that holds together when shaped into patties.

The formed fritters are air fried at 350°F, brushing or spraying oil on top to encourage browning. Cooking takes about 15 minutes total, flipping halfway through to brown both sides evenly. The result is fritters with a lightly crisp surface and tender interior. The seasoning mix adds a mild heat and aromatic notes that complement the zucchini's mild flavor.

These fritters can be served warm accompanied by sour cream and chopped green onions or a dipping sauce of choice. The recipe allows customization of seasoning blends and is suitable for using a kitchen towel if cheesecloth is unavailable for squeezing excess water. Optionally, banana or Italian herb variations and almond flour substitutions can tailor the fritters to dietary needs or flavor preferences.

Ingredients

Servings
  • 2 zucchini
  • 1 egg
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper ground

Instructions

  1. Shred the zucchini and squeeze out excess water using cheesecloth. Removing as much liquid from the zucchini as possible is key to getting crispy air fryer fritters.
  2. Place the shredded zucchini in a bowl and add egg, flour, baking powder, salt, Italian seasoning, red pepper flakes, garlic powder, and black pepper. Mix everything.
  3. Preheat the air fryer for 5 minutes at 350 degrees F.
  4. While it preheats, make 9-10 patties out of the zucchini mixture. It is easiest to roll the fritter batter into a ball, then flatten the ball on a cutting board.
  5. Place the patties in the air fryer basket and brush or spray some oil on top. Use parchment paper or foil in the basket to make cleanup easier.
  6. Air fry the patties for 10 minutes. Flip and then cook for another 5 minutes or until lightly brown.
  7. Serve with sour cream and green onions or with a dipping sauce.

Notes

  • Leaving the zucchini skin adds nutrients, texture, and color but peeling is also acceptable.
  • If cheesecloth is unavailable, use a clean kitchen towel or press shredded zucchini in a colander to remove moisture.
  • Adjust seasoning blend to your taste; Italian seasoning and red pepper flakes can be varied or omitted.
  • Substitute almond flour for all-purpose flour to make the fritters gluten-free.
