Ingredients
- 2 lb. boneless, skinless chicken breasts or thighs cubed
- 5.3 oz. container of plain Greek yogurt I use Chobani
- 1 tbsp. Aji amarillo chile pepper powder use less for less spiciness
- 1 1/2 tsp. ground cumin
- 1 1/2 tsp. garlic powder
- 1 tsp. salt
- 1/4 tsp. black pepper
- skewers
- Optional: vegetables for veggie kabobs
Instructions
- In a large bowl, combine chicken, yogurt, and spices. Mix everything together so it's all incorporated and the chicken is coated well. Marinate for 1 hour.
- Thread all the chicken pieces onto skewers. Cook on grill, grill pan, or griddle over medium, medium/high heat for about 5-6 minutes and then turn them, so each side eventually touches the heat, until no longer pink in the middle and a thermometer reads 165°.
- Serve with veggie kabobs, rice, or your favorite side! Enjoy!
