Description

This treat begins by removing pits from Medjool dates and stuffing each with about a teaspoon of almond butter. Dark chocolate is melted gently, then each stuffed date is dipped halfway into the chocolate. The dates are finished with flakes of sea salt sprinkled on top, adding texture and flavor contrast.

Chilling the dates in the refrigerator sets the chocolate for a firm finish. The texture offers chewy, sweet fruit wrapped around smooth almond butter with a crisp chocolate shell. The sea salt enhances the flavors by cutting the sweetness.

  • 12 dates prefertably Medjool dates
  • ¼ cup almond butter
  • cup dark chocolate
  • 2 tablespoons sea salt flaky

Instructions

  1. Make a vertical slit in each date, and remove the pits. Then, stuff each date with 1 teaspoon of almond butter. Repeat with all the dates.
  2. In a medium microwave-safe bowl, place dark chocolate. Microwave for 30 seconds. Stir, and continue microwaving in 30-second bursts, until your chocolate is fully melted.
  3. Dip each Medjool date halfway into the dark chocolate. Set aside. Repeat with all the stuffed dates.
  4. Sprinkle each Medjool stuffed date with a few flakes of sea salt.
  5. Cool in refrigerator for at least 1 hour, or however long you want.
  6. Stuffed dates will keep in an airtight container in the fridge for 1 week, or 3-4 days outside the refrigerator. They can also be frozen for 6 months.
