Ingredients

  • 3 tablespoons vegetable oil
  • 1/2 cup sour cream
  • 1/2 cup sugar
  • 1 large egg
  • 1/4 cup whole milk
  • 1 teaspoon almond extract
  • 1 1/4 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup fresh cherries , pitted and chopped
  • 1 cup miniature semisweet chocolate chips
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a 12 cup muffin tin with muffin liners.
  3. In a large bowl add the vegetable oil, sour cream, sugar, egg, whole milk, and almond extract and whisk until fully combined.
  4. Into a second bowl sift the flour, cocoa powder, baking powder, baking soda, and salt and whisk until just combined.
  5. Add dry ingredients to the wet ingredients and whisk until just combined.
  6. Stir in fresh cherries and 1/2 cup of chocolate chips.
  7. Using a 1/4 cup ice cream scoop, scoop the batter into each liner.
  8. Top with 1/2 cup of chocolate chips and sliced almonds.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
