Almond Crusted Salmon

This almond crusted salmon recipe looks and tastes fancy, but it's super simple to make. It's loaded with flavor, not work.

Ingredients

  • 12 ounces wild salmon cut into 4-6 ounce fillets
  • 1 tablespoon olive oil or cooking spray
  • ½ cup coarsely chopped almonds
  • 1 teaspoon Italian seasoning
  • 2 tablespoon dijon mustard
  • 1 lemon slices (reserve 1 teaspoon of lemon juice)
  • salt and pepper to taste

Instructions

  1. Get your almonds out.
  2. Coarsely chop.
  3. Preheat the oven to 425 degrees fahrenheit.
  4. Lightly oil a cast iron skillet or baking sheet (you can line with parchment paper as an alternative).
  5. Place the salmon fillets on the prepared baking sheet.
  6. Get out and measure your ingredients.
  7. In a small bowl, mix together the dijon mustard and 1 teaspoon of fresh lemon juice.
  8. Spoon over the top of the salmon fillets. Sprinkle it with salt and pepper.
  9. In a separate small bowl, mix together the chopped almonds and italian seasoning.
  10. Generously cover the salmon and mustard mixture with the seasoned crushed almonds.
  11. Bake in a preheated oven for 15-20 minutes
  12. Until the salmon flakes easily with a fork.
  13. Serve with a garnish of fresh lemon slices.
  14. Enjoy every bite!
