Almond Flour Cookies

These soft baked almond flour cookies are quick and easy! They are a healthier and wholesome version of classic chocolate chip cookies. These cookies are great for any fun occasion!

Ingredients

  • ¾ cup coconut oil solid
  • 1 ⅓ cups coconut sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups almond flour
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 1 cup dark chocolate chips

Instructions

  1. First, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking pan with parchment paper.
  2. In the bowl of a stand mixer, add the coconut oil and coconut sugar. Beat together for 2 minutes, until light and frothy.
  3. Add in the eggs and vanilla extract. Beat together.
  4. Next, add in the almond flour, baking soda, and sea salt. Stir together.
  5. Fold in the dark chocolate chips.
  6. Use a cookie scoop to scoop out the dough. Place on the prepared pan. Use your hands to lightly press down on each dough ball.
  7. Bake for 9 to 10 minutes or until the cookies look lightly golden around the edges.
  8. Finally, remove the pan from the oven. Allow the cookies to cool on the pan for 10 minutes before transferring to a cooling rack. Sprinkle extra sea salt on top if desired.

  • Use solid coconut oil, not melted or softened.  If your coconut oil is not solid at room temperature, measure out the 6 tablespoons and place it in the fridge.
  • Use a stand mixer or electric hand mixer to beat the coconut oil and coconut sugar.  Beat for at least 2 minutes.
  • We suggest using a cookie scooper to make evenly sized, round balls of dough.
  • Slightly press down on each dough ball before baking.  Otherwise, these cookies will not flatten out much.
  • Store leftovers at room temperature for 4 days.  Store in an airtight container.
