Almond Flour Cookies
These soft baked almond flour cookies are quick and easy! They are a healthier and wholesome version of classic chocolate chip cookies. These cookies are great for any fun occasion!

Ingredients
- ¾ cup coconut oil solid
- 1 ⅓ cups coconut sugar
- 2 eggs
- 1 tsp vanilla extract
- 3 cups almond flour
- 1 tsp baking soda
- 1 tsp sea salt
- 1 cup dark chocolate chips
Instructions
- First, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking pan with parchment paper.
- In the bowl of a stand mixer, add the coconut oil and coconut sugar. Beat together for 2 minutes, until light and frothy.
- Add in the eggs and vanilla extract. Beat together.
- Next, add in the almond flour, baking soda, and sea salt. Stir together.
- Fold in the dark chocolate chips.
- Use a cookie scoop to scoop out the dough. Place on the prepared pan. Use your hands to lightly press down on each dough ball.
- Bake for 9 to 10 minutes or until the cookies look lightly golden around the edges.
- Finally, remove the pan from the oven. Allow the cookies to cool on the pan for 10 minutes before transferring to a cooling rack. Sprinkle extra sea salt on top if desired.

- Use solid coconut oil, not melted or softened. If your coconut oil is not solid at room temperature, measure out the 6 tablespoons and place it in the fridge.
- Use a stand mixer or electric hand mixer to beat the coconut oil and coconut sugar. Beat for at least 2 minutes.
- We suggest using a cookie scooper to make evenly sized, round balls of dough.
- Slightly press down on each dough ball before baking. Otherwise, these cookies will not flatten out much.
- Store leftovers at room temperature for 4 days. Store in an airtight container.
