Almond Granola Bars
Who is ready for one heck of a snack bar?! My family goes crazy over granola bars, but they aren’t always the cheapest treat to buy – the good ones at least. Especially when the whole box is gone in about one hour.

Ingredients
- 1 ½ cups quick cooking oats
- 1 ½ cups roasted unsalted almonds
- ⅓ cup rice krispie cereal
- ⅓ cup oat flour
- ½ teaspoon salt
- ½ teaspoon cinnamon, optional
- 1 cup creamy almond butter
- ½ cup honey
- 2 teaspoons vanilla extract
Instructions
- Line an 8x8-inch baking dish with parchment paper.
- In a large bowl, combine the 1 ½ cups quick cooking oats, 1 ½ cups roasted unsalted almonds (coarsely chop these if desired), ⅓ cup rice krispie cereal, ⅓ cup oat flour, and ½ teaspoon salt. Add ½ teaspoon cinnamon, if desired.
- In another bowl, mix the 1 cup creamy almond butter, ½ cup honey, and 2 teaspoons vanilla extract.
- Mix the oat mixture and honey mixture together until they are well combined. If the mixture seems too wet, add in a few more oats as needed for firmer bars.
- Press the mixture into the prepared pan and pack it down well. Packing the mixture well is what will hold the bars together.
- Cover and place in the fridge overnight.
- Remove from the pan and slice with a very sharp knife. Keep the bars wrapped individually in the fridge.
