Almond Joy Energy Balls Recipe
Almond Joy Energy Balls are bite-sized snacks made from toasted chopped almonds blended with cocoa powder, honey, and melted coconut oil into a thick paste. Formed into balls and coated with shredded coconut or chopped almonds, these no-bake treats combine nutty, chocolate, and coconut flavors in a convenient, portable form.
Ingredients
- 1 1/2 cups almonds toasted and chopped
- 4 tablespoons cocoa powder unsweetened
- 4 tablespoons honey
- 2 tablespoons coconut oil melted
- water if needed, splash
- coconut or chopped almonds for garnish, sweetened shredded
Instructions
- Pour almonds into the bowl of a food processor. Pulse until nuts turn into a coarse meal.
- Pour in cocoa powder, honey, and coconut oil. Continue pulsing until a very thick mixture forms. You may have to scrape down the sides a few times. Also, feel free to add in splashes of water or more honey to get the mixture moving in the bowl, but be careful not to add too much.
- Once you have a thick paste, scoop into small balls using a cookie scoop. Roll in shredded coconut or chopped almonds. Store in an air tight container until ready to eat.
