Almond Joy Energy Balls Recipe
Description
Almond Joy Energy Balls Recipe features toasted and chopped almonds processed into a coarse meal, then combined with unsweetened cocoa powder, honey, and melted coconut oil. The mixture is pulsed until forming a thick, sticky paste that can be shaped into small balls. Rolling the balls in sweetened shredded coconut or more chopped almonds adds texture and completes the flavor inspired by the classic Almond Joy taste.
The energy balls are naturally sweetened by honey with a rich chocolate and nut profile, while the coconut provides an additional layer of flavor and chewiness. They require no baking and are ideal for snacking, energy boosts, or a quick dessert.
Adjust the consistency by adding a splash of water or more honey if the mixture feels too dry during preparation. Store the energy balls in an airtight container to maintain freshness until ready to enjoy.
Ingredients
- 1 1/2 cups almonds toasted and chopped
- 4 tablespoons cocoa powder unsweetened
- 4 tablespoons honey
- 2 tablespoons coconut oil melted
- water if needed, splash
- coconut or chopped almonds for garnish, sweetened shredded
Instructions
- Pour almonds into the bowl of a food processor. Pulse until nuts turn into a coarse meal.
- Pour in cocoa powder, honey, and coconut oil. Continue pulsing until a very thick mixture forms. You may have to scrape down the sides a few times. Also, feel free to add in splashes of water or more honey to get the mixture moving in the bowl, but be careful not to add too much.
- Once you have a thick paste, scoop into small balls using a cookie scoop. Roll in shredded coconut or chopped almonds. Store in an air tight container until ready to eat.
