Almost Corned Beef Brisket with Cabbage & Veggies

This easy and delicious slow cooker recipe features the flavor profile of traditional corned beef brisket without the wait and without the bad ingredients.

Ingredients

  • 4 pounds beef brisket
For Brine
  • 2 quarts water
  • ½ cup mineral salt
Other Ingredients
  • 1 large yellow onion, quartered
  • 32 baby carrots
  • 15 radishes, ends trimmed
  • 4 whole cloves garlic, peeled
  • 4 cups water
  • 2 tablespoons raw apple cider vinegar
  • 1 tablespoon pickling spices
  • ½ teaspoon ground black pepper
  • 1 head green cabbage, cut into wedges

Instructions

To Brine Brisket
    Cup of Yum
  1. Place the brisket in an airtight (2 gallon) bag or dish; set aside.
  2. Stir the water and salt together until the salt dissolves. Pour into the container with the brisket.
  3. Allow to brine for for 8 hours or overnight.
To Make Complete Dish
  1. Place the onion, carrots, raddishes, and garlic in the bottom of a slow cooker.
  2. Mix the water, vinegar, pickling spices, and pepper together in another container. Pour over the veggies in the crock pot.
  3. Remove the brisket from the brine (discard brine) and place atop the veggies in the slow cooker.
  4. Spread the cabbage over the top of the brisket.
  5. Cover and let cook on low for about 6 hours.

Notes

  • Pressure Cooker - Place ingredients in a 6 to 8 quart electric pressure cooker. Allow to cook on high pressure for 1 hour then allow pressure to naturally release.
