Aloo Masala

Ingredients

  • 4 onions , thinly sliced
  • 2 potatoes (firm-fleshed), diced
  • 1 teaspoon tomato paste
  • A few cilantro leaves , chopped
  • ½ teaspoon mustard seeds
  • 1 teaspoon curry powder
  • 1 clove garlic , chopped
  • 1 tablespoon grated fresh ginger
  • 4 black peppercorns
  • 1 clove
  • 2 pinches asa foetida
  • ½ cup water
  • vegetable oil
  • salt

Instructions

  1. Heat 3 tablespoons of vegetable oil in a Dutch oven.
  2. Add the mustard seeds, asa foetida, peppercorns, cloves and onions. Season with salt, mix and sauté, stirring regularly, until the onions are brown.
  3. Add the ginger, garlic, curry, tomato paste and ⅓ cup (80 ml) of water. Mix and cook for 5 minutes.
  4. Add potatoes and remaining water and mix well.
  5. Cover and cook for 45 minutes to 1 hour on low heat, stirring from time to time very gently so as not to crush the potatoes. Add a little boiling water if necessary.
  6. Prick a potato cube with the tip of a knife to check cooking. The potato must be very tender.
  7. Garnish the aloo masala with cilantro leaves before serving.
