Aloo masala is an Indian dish based on potatoes and spicy onion confit, used as a garnish for dosa or as a side dish with rice.

Ingredients
- 4 onions , thinly sliced
- 2 potatoes (firm-fleshed), diced
- 1 teaspoon tomato paste
- A few cilantro leaves , chopped
- ½ teaspoon mustard seeds
- 1 teaspoon curry powder
- 1 clove garlic , chopped
- 1 tablespoon grated fresh ginger
- 4 black peppercorns
- 1 clove
- 2 pinches asa foetida
- ½ cup water
- vegetable oil
- salt

Instructions
- Heat 3 tablespoons of vegetable oil in a Dutch oven.
- Add the mustard seeds, asa foetida, peppercorns, cloves and onions. Season with salt, mix and sauté, stirring regularly, until the onions are brown.
- Add the ginger, garlic, curry, tomato paste and ⅓ cup (80 ml) of water. Mix and cook for 5 minutes.
- Add potatoes and remaining water and mix well.
- Cover and cook for 45 minutes to 1 hour on low heat, stirring from time to time very gently so as not to crush the potatoes. Add a little boiling water if necessary.
- Prick a potato cube with the tip of a knife to check cooking. The potato must be very tender.
- Garnish the aloo masala with cilantro leaves before serving.
