Ingredients

  • 8 Bacon strips
  • 1 onion diced
  • 4 garlic minced, cloves
  • 1 tsp. oregano dried
  • 1/4 tsp. red pepper flakes
  • 1 bay leaf
  • crushed tomatoes 2 cans, 28 oz. each
  • salt to taste
  • black pepper to taste

Instructions

    Cup of Yum
  1. Chop bacon into half-inch pieces (alternatively, you can use kitchen shears to cut the bacon). Cook bacon in a large pot until it is almost crispy. Leave the bacon and drippings in the pan and add the onion, garlic, oregano, red pepper flakes, and bay leaf.
  2. Cook over medium heat until the onion has softened, then add the tomatoes, salt & pepper. Bring to a boil, then reduce the heat to a simmer and cook over low heat for an hour or so. Enjoy! This is a good time to start making meatballs!
