Ingredients
- 1 pound flank steak
- 3 tablespoons olive oil
- 1 tablespoon chili powder
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ¼ teaspoon cumin
- ¼ teaspoon red pepper flakes
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons finely chopped fresh cilantro
- 1 cup sliced onion about 1 small onion
- 1 cup sliced red bell pepper about 1 whole pepper
- 1 cup sliced yellow bell pepper about 1 whole pepper
- 1 cup sliced green bell pepper about 1 whole pepper
Instructions
- Add 2 of the 3 tablespoons olive oil, 1 tablespoon chili powder, ½ teaspoon paprika, ½ teaspoon garlic powder, ¼ teaspoon cumin, ¼ teaspoon red pepper flakes, ½ teaspoon salt, and ¼ teaspoon ground black pepper to a large ziplock bag and mix to combine. Add 1 pound flank steak and ensure the steak is fully coated in the marinade. Close the back and let the steak marinate for at least 30 minutes.
- Add the remaining 1 tablespoon of olive oil to a large skillet and heat over medium heat. Add 1 cup sliced onion, 1 cup sliced onion, 1 cup sliced red bell pepper, 1 cup sliced yellow bell pepper, and 1 cup sliced green bell pepper to the skillet and cook for about 2-3 minutes.
- Turn the skillet to high heat and add the marinated steak. Cook each side for 2-3 minutes per side until it gets a golden brown crust. Continue to cook until the steak reaches your desired doneness, I cooked mine to an internal temperature of 130 degrees Fahrenheit for medium-rare.
- Remove the steak from the pan and set it aside to rest for at least 5 minutes before slicing it into ¼-inch thick strips across the grain. Serve with the cooked peppers and onions and garnish with 2 tablespoons finely chopped fresh cilantro and desired toppings.
