Ambrosia Salad
Ambrosia Salad combines canned pineapple and mandarin oranges with shredded coconut, mini marshmallows, and Greek yogurt or sour cream. The soft, creamy texture balances the sweet and tangy fruit, and the marshmallows add a light chewiness. Refrigerating the salad allows the flavors to blend, creating a refreshing and easy-to-serve side or dessert salad. Maraschino cherries garnish the top and add a colorful finish.
Ingredients
- 1 oz can pineapple drained, crushed or tid-bits (in juice
- 1 oz can mandarin oranges drained, in juice
- 1 cup shredded coconut I used unsweetened, sweetened or unsweetened
- 1 cup mini marshmallows can use fruity-fun marshmallows for added color
- 1 cup Greek yogurt full fat; plain; or sour cream
- 1-4 maraschino cherries for topping
Instructions
- In a large mixing bowl, add the drained pineapple, drained mandarin oranges, shredded coconut, mini marshmallows and Greek yogurt (or sour cream).
- Gently fold all the ingredients together until the fruit and marshmallows are evenly coated.
- Cover the bowl and refrigerate for at least 1-2 hours before serving. This chilling time allows the flavors to meld together.
- Just before serving, you can garnish with a few maraschino cherries and a sprinkle of shredded coconut if you like.
Notes
- Store any leftovers in an airtight container in the refrigerator for up to 4 days to maintain freshness.
