Description
Ambrosia Salad features a blend of drained canned pineapple and mandarin oranges, mixed with shredded coconut and mini marshmallows. The addition of Greek yogurt or sour cream provides creaminess and a slight tang, helping to bind the ingredients while keeping the salad light. After gently folding the components together, chilling the salad for a couple of hours allows the flavors to meld and the marshmallows to soften slightly, enhancing texture.
This salad is typically served cold, making it a cooling side dish or a sweet snack. The garnish with maraschino cherries adds a classic touch of color and sweetness. The combination of chewy marshmallows and crunchy coconut delivers a varied mouthfeel complemented by juicy fruit pieces.
Leftover salad can be stored in an airtight container in the refrigerator for three to four days without losing its texture or flavor quality.
Ingredients
- 1 oz can pineapple drained, crushed or tid-bits (in juice
- 1 oz can mandarin oranges drained, in juice
- 1 cup shredded coconut I used unsweetened, sweetened or unsweetened
- 1 cup mini marshmallows can use fruity-fun marshmallows for added color
- 1 cup Greek yogurt full fat; plain; or sour cream
- 1-4 maraschino cherries for topping
Instructions
- In a large mixing bowl, add the drained pineapple, drained mandarin oranges, shredded coconut, mini marshmallows and Greek yogurt (or sour cream).
- Gently fold all the ingredients together until the fruit and marshmallows are evenly coated.
- Cover the bowl and refrigerate for at least 1-2 hours before serving. This chilling time allows the flavors to meld together.
- Just before serving, you can garnish with a few maraschino cherries and a sprinkle of shredded coconut if you like.
